If you don’t have a store bought tomato paste in your pantry you can easily make your own from fresh or canned tomatoes. It’s simple and when you make your own you know exactly what the ingredients are. An advantage of making your own tomato paste is being able to cut down on added salt and sugar in your diet.

Here’s a quick recipe for making your own tomato paste to use as a pasta sauce from fresh tomatoes. If using fresh tomatoes, allow 2 to 3 hours to create the perfect tomato paste.

Top Tip: Using canned tomatoes will shorten the cooking time to just 10 minutes.

Favourite and Simple Spring Pasta Dish

Ingredients:

  • 1 lb. dry pasta (any kind of pasta you prefer but I used spaghetti)
  • 1 cup tomato paste
  • Fresh basil leaves
  • Parmesan cheese

Instructions:

  • 1. Cook the pasta according to the instructions on the packet and the quantity required for the number of people. IMPORTANT: save a cup of the pasta water when you drain the pasta.
  • 2. Warm the tomato paste in a saucepan and add the saved pasta water to reduce the thickness - amount will vary depending on how thick or thin you want the sauce. Thicker is great for adding to the top of spaghetti.
  • 3. Garnish this simple tomato paste pasta dish with fresh basil leaves (from your garden if you have fresh spring basil leaves) or store bought works just as well.
  • 4. Add some parmesan cheese grated or shaved as in image for that extra special fresh spring touch.
